Nestle released a press release,
Researchers have found a way to structure sugar differently, even when much less sugar is used in chocolate your tongue will perceive the same sweetness as before. This discovery will enable us to decrease the total amount of sugar in all our confectionery products, while maintaining a very natural taste.
In the above image, on the left side you can see sugar crystals appear in their current structure. And with the Nestle's new innovation, sugar crystals appear as shown on the right. This allows your tongue to taste the same sweetness while consuming less sugar.
This is a truly groundbreaking research that is inspired by nature and has the potential to decrease the total amount of sugar by up to 40%. And our scientists have discovered a completely new way to use a traditional, and natural ingredient.
Nestle is patenting its findings and will begin to sell the new low sugar confectionery products starting from 2018 onwards. And the company is expecting to provide more details about their first roll-out of reduced sugar products sometime next year.
It is one of a wide range of commitments the company has made on nutrition from few years. This includes improving the nutritional profile of its products by reducing the amount of sugar, salt and saturated fat they contain. However, at the same time increases healthier nutrients such as vitamins, minerals and whole grain.
